The art of beverage formulation has continually evolved, introducing novel ways to entice consumers with unique taste profiles. Traditionally, beverages have relied on blends of spices and flavor compounds to create appealing flavors. However, the enjoyment of such flavors diminishes over time as consumers develop a taste tolerance. This phenomenon can result from a coating on taste receptors or temporary desensitization to flavor compounds, ultimately dulling the sensory experience.

To combat this challenge, US based startup Star Catcher has filed a patent application and launched a product with flavor shifting technology. These innovative drinks are designed to gradually transition between flavors as they are consumed, delivering an evolving taste journey. Unlike conventional methods, this approach provides a seamless progression of flavors that keeps the experience fresh and engaging. The company currently offers this product range under their Shyft brand name with flavors including:

  • Citrus to Cherry: Starting with a zesty citrus note that gradually shifts to a rich cherry flavor.

  • Raspberry to Watermelon: Beginning with the tartness of raspberry, evolving into a refreshing watermelon taste.

  • Peach to Ginger: Initiating with the sweetness of peach, transitioning to a spicy ginger finish.

How their technology works? The new approach to flavor shifting revolves around creating beverages that offer a sequential flavor experience, shifting smoothly from one taste to another. This is achieved through three core components: a flavor profile, a malt base, and a sweetening system. The malt base, which constitutes 90% of the beverage’s volume, can be either a clear malt base (CMB) or a fermented malt base (FMB). The sweetening system, using ingredients like agave or sugar, balances the flavors, ensuring a pleasant taste throughout.

For instance, a flavor shifting beverage might start with a citrus taste and gradually transition to a cherry flavor as it is consumed. This seamless progression offers a unique sensory experience compared to the abrupt changes seen in time-release methods. Other flavor combinations include peach to ginger, blackberry to lime, and raspberry to watermelon, showcasing the versatility of this innovation.

The flavor shift is achieved through precise combinations of flavorings, acids, and salts. Acids like citric and malic acid, paired with salts such as sodium citrate dihydrate, stabilize the pH within a range of 2.5–4.5, maintaining both the beverage’s stability and flavor integrity. This careful pH management is essential for ensuring a consistent and enjoyable taste experience.

The production process for these beverages involves several steps. First, the malt base is prepared by fermenting sugars such as malt syrup, sucrose, or high-fructose corn syrup with yeast, achieving a desired gravity of 20–30 °Brix. The flavor profile is then added, blending flavors, acids, and salts to create the shifting experience. A sweetener is incorporated to enhance the overall taste, and the beverage is carbonated for added sensory appeal. Finally, the product is clarified to achieve a visually appealing, sediment-free clarity.

Flavor shifting beverages hold immense potential for the beverage industry, particularly in categories like alcoholic seltzers, non-alcoholic mocktails, and flavored waters. By offering a dynamic tasting experience, these drinks stand out in a crowded market, promising both novelty and satisfaction.
